Sophisticated Soba

Taking its cue from the famous Tokyo outpost, Matsugen is an authentic soba-lover’s paradise. Minimalist décor, maximum flavor—this Beachwalk Street establishment is a favorite of both locals and Japanese visitors alike. Take a seat in one of the booths or better yet, grab a spot toward the front of the restaurant and watch head soba chef Shingo Chibana make his famous buckwheat noodles from scratch. Aside from the usual offerings of cold and hot udon and soba—we are big fans of the sesame-infused gomadare soba, served cold—the authentic eatery also has a generous selection of appetizers such as saba miso, chilled Hamakua tomato and Okinawan fish cake. Though their dessert menu is limited, the few available—like their green tea ice cream served with mochi and azuki beans—won’t you leave you wanting.
